A Full-of-Flavor Foodie Friday

SeaWorld Orlando’s
fiery festival, Viva la Musica, starts tomorrow! Here’s a tasty look at a Spanish chicken and rice recipe, Arroz con Pollo. It’s just one of the many authentic dishes that will be featured at this year’s spicy Viva la Musica!

1 whole chicken cut into 8 pieces
1 teaspoon garlic
teaspoon cumin
2 bay leaves
1 teaspoon dry oregano
4 ounces onion, diced small
2 ounces green pepper, diced small
1 tablespoon chicken base
2 piece pack Sassoon with Achiote
4 ounces green peas
1 cup rice
3 cups water
Salt and pepper, to taste

1. Place salt and peppered chicken in a small pot
2. Add diced onions and green peppers
3. Cook for three (3) minutes, and then add all seasonings and water
4. Bring mixture to a boil, but only cook chicken until it is half-way done
5. Add rice mix and lower the heat, cover and simmer for 30 minutes
6. Garnish with green peas

The Viva La Musica festival area opens at noon and Chino y Nacho perform at 3 p.m. Mark your calendars and come out and enjoy the day (tomorrow) at SeaWorld Orlando!
