Foodie Friday -- Rosemary Maple-Glazed Salmon with Black Bean and Pineapple Salsa

Featured at Discovery Cove’s very own Laguna Grill, this rosemary maple-glazed salmon paired with black bean and pineapple salsa is a tangy-sweet combination that’s bursting with Caribbean-style flavor. Switch up your normal salmon recipe with this perfect-for-summer dish!

Ingredients for Black Bean and Pineapple Salsa:
8 ounces black beans, cooked
8 ounces pineapple, diced
2 ounces yellow onion, diced
2 ounces green pepper, diced
2 ounces olive oil
2 ounces white vinegar
tablespoon sugar
tablespoon cilantro, chopped
Salt and pepper, to taste

Ingredients for Maple Glazed Salmon:
2 salmon filets (6 ounces each)
cup maple syrup
cup honey
cup butter
cup brown sugar
Rosemary, to taste
Cooking oil

1. Place all maple glazed salmon ingredients, except salmon, in a sauce pot
2. On low heat, melt for 30 minutes
3. Place salmon in separate pan and simmer in oil until done
4. While salmon and maple glaze are cooking, mix all salsa ingredients together in separate bowl
5. Serve salmon with maple glaze and pair with salsa
