This morning, SeaWorld Orlando had a special park-opening ceremony in honor of Veterans Day, where guests and our team members were recognized for their military service. In tribute to this special day, we'd like to salute those who have served in this week's Foodie Friday, as well. Treat a veteran this weekend to a patriotic pastry, like these Red Velvet Cupcakes. Cupcake Ingredients
2 ½ cups all purpose flour
2 cups sugar
½ cup baking cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon baking soda
2 sticks butter, softened
5 large eggs
1 cup buttermilk
1 teaspoon vanilla
1 teaspoon red food coloring
Directions
- Combine flour, cocoa powder, baking powder, baking soda and salt in a mixing bowl.
- Sift dry ingredients three times.
- Mix together butter and sugar until light and fluffy.
- Add eggs one at a time, making sure to beat well after each egg.
- Add ¼ of dry ingredients to creamed mixture then approximately ¼ of buttermilk, alternating until mixed well.
- Mix in vanilla and red food coloring.
- Fill lined cupcake pans ½ full of your red velvet batter.
- Bake in a preheated 350 degree oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
- Cool cupcakes in pans for 5 to 10 minutes then remove from pans. Cool completely on wire racks before frosting.
Cream Cheese Frosting
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanila extract
4 cups sifted confectioner’s sugar
Directions
- In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth.
- Add the sugar and on low speed, beat until incorporated.
- Increase the speed to high and mix until very light and fluffy.
