Foodie Friday: Pecan Pie — A Delicious Christmas Staple

I get all nutty when my eyes meet a luscious pecan pie. And the sweet aroma … well, it gets my taste buds worked up before I even savor a mouth-watering bite of a SeaWorld San Diego pecan pie. I’m lickin’ my lips right now.

Maybe I should try to make one for you and me. Better yet, all you really need is a good recipe, the right ingredients and instructions provided by an award-winning SeaWorld pastry chef and you can make your own.

  • Ingredients:
  • • 1 cups white sugar
  • • cup dark corn syrup
  • • cup butter
  • • 1 tablespoon cold water
  • • 2 teaspoons cornstarch
  • • 3 eggs
  • • teaspoon salt
  • • 1 teaspoon vanilla extract
  • • 1 cups chopped pecans
  • • 1 (9 inch) pre-unbaked

Preheat oven to 375F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients and pour over pecans. (No need for an electric mixer, you can mix this by hand). The pecans will rise to the surface of the pie. Bake at 375F for 40 to 45 minutes until the filling has set. About 20 minutes into the cooking, you may want to use a pie crust protector, or tent the edges of the pie crust with aluminum foil to prevent the pie crust edges from burning. Remove the pie from the oven and let it cool completely. This recipe serves eight.
