Ingredients:
1 (1 pound) new potatoes
6 tablespoons olive oil
Juice from ½ lemon
1 tablespoon whole grain mustard
2 (5 ounce) mozzarella cheese balls
1 (6 ounce) bag of spinach
7 ounces roasted pepper in olive oil
Handful of fresh basil
Instructions:
Cube the potatoes, then cook in boiling water until tender.
Drain potato cubes and set aside.
For the dressing, whisk the olive oil, lemon juice, and whole grain mustard together.
Season the dressing with salt and pepper to taste.
In a large bowl, mix all ingredients with the warm potato cubes.
Drizzle dressing over the ingredients.
Lightly toss, then serve.
