Foodie Friday -- Mouth-Watering Bacalaitos

Tomorrow is the closing day of Viva La Musica at SeaWorld Orlando, but that doesn’t mean you can’t enjoy the food all year long. We want to share with you a featured Latin dish, straight from SeaWorld’s very own Chef Colon. These golden-fried codfish fritters make the perfect appetizers, try them!

cup bacalao (codfish)
cup flour
teaspoon baking powder
teaspoon salt
cup water
1 teaspoon garlic, minced
2 tablespoons cilantro, chopped
1 envelope sazon seasoning
Pepper to taste
Vegetable oil, for frying

1. Cut the bacalao into small chunks and boil on high for 10 minutes, repeat this process twice
2. Drain, debone, wash and shred the bacalao
3. Combine flour, salt and baking powder; pour water slowly to make a thick sauce
4. Add pepper, sazon, garlic, cilantro and shredded bacalao, mix well
5. In a skillet, preheat inch of oil
6. Fry battered fish on high heat, dropping in big spoonfuls
7. Turn as needed, when golden brown drain on paper towels
