Foodie Friday -- Festive Carrot Cake

Looking for a delicious dessert to serve for Easter? Look no further, because SeaWorld Orlando's carrot cake with cream cheese frosting consistently ranks as a guest (and employee) favorite. So make sure your family saves room for this festive dessert.

Cake Ingredients:
2 cups granulated sugar
1 1/3 cups salad oil
1 tablespoon salt
4 eggs
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 cup crushed pineapple (drained)
1 teaspoon cinnamon
1/3 cup shredded carrots
1/4 cup raisins
1/2 cup pecan pieces
Dash vanilla extract

Instructions:
1. In a mixing bowl, add sugar, salt, and then add oil slowly
2. Add eggs, then flour and baking soda, whisk until smooth
3. Add remaining ingredients
4. Fill two, greased 9” pans lined with parchment paper until they are approximately half-way or three-quarters full
5. Bake at 350 degrees in a conventional oven for 45 minutes or until the top of the cake springs back when lightly touched
6. Let cool for 10-15 minutes, then remove from pans
7. Refrigerate until needed

Icing Ingredients:
3 cups cream cheese
1 cup butter
3 cups powdered sugar
2 teaspoons almond extract
2 teaspoons vanilla

Instructions:
1. Place butter and cream cheese at room temperature
2. Whisk butter
3. Add cream cheese and mix
4. Add powdered sugar slowly
5. Add vanilla and almond extract
6. Mix well, then scrape the bowl edges with a spatula to prevent sticking
7. Remove icing from bowl and refrigerate until ready to use*

* To spread on cake it is best used at room temperature.
