Foodie Friday: Discovery Cove's Jambalaya

You can smell the fragrant spices of Discovery Cove’s signature dish, Jambalaya, from the entrance all the way to The Grand Reef. Guests can find this New Orleans tradition at Laguna Grill. Now, you can add the recipe to your personal cook book.

Ingredients:
1 cup Spanish onions
1 cup celery
1 cup green peppers
1 cup red peppers
1 tbsp fresh minced garlic
24 ounces diced canned tomatoes
1 tbsp thyme
1 tsp cayenne pepper
2 tsp black pepper
1 pound diced ham
4 chicken bouillon cubes
4 cups water
1 pounds grilled chicken chunks
1 stick butter
1 can tomato paste
cup corn starch
1 pounds andoullie sausage

Directions:
1. Saute vegetables in melted butter on high heat for 8 minutes
2. Stir in garlic and spices
3. Add ham, sausage, diced tomatoes and continue stirring bringing mixture to a boil
4. Cover and simmer for 20 minutes
5. Mix in cooked chicken and simmer 5 additional minutes
6. Serve over your favorite rice
