Foodie Friday -- Creamy Cheesecake

There are so many different variations of cheesecake, but they all have one thing in common – the delicious, creamy taste. This recipe, by SeaWorld’s Chef Colon, also includes a homemade crust to go with the rich cheesecake filling, so save room for dessert!

Crust Ingredients:
1 ˝ cup all purpose flour
1/3 cup white sugar
1 egg, beaten
˝ cup butter, softened

Filling Ingredients:
2 ˝ pounds cream cheese, softened
1 ľ cup white sugar
3 tablespoons all purpose flour
5 eggs
2 egg yolks
Ľ cup heavy cream

1. Preheat oven to 400 degrees; lightly coat a 10-inch spring form pan with oil
2. Combine 1 ˝ cup flour, 1/3 cup sugar, 1 egg and ˝ cup butter; spread to the edges of the pan to form crust
3. Bake 15 minutes at 400 degrees; let cool
4. Increase oven temperature to 475 degrees
5. In a bowl, mix cream cheese, heavy cream, 1 ľ cup sugar, 3 tablespoons flour, eggs and yolks
6. Pour filling over crust; bake for 10 minutes
7. Reduce temp to 200 degrees; continue to bake for 1 hour
8. Turn oven off but leave cake in for another hour
9. Refrigerate overnight
