Foodie Friday -- Coconut Curry Chicken

With The Grand Reef opening soon at Discovery Cove, and all of the incredible things you can do -- swimming with dolphins, hand-feeding birds and snorkeling, we can't let you forget about the amazing food available too (yes, included with your admission!). Laguna Grill's coconut curry chicken is a Caribbean delight with a sweet flavor fused with a dash of spice. This chicken recipe is a perfect dish to liven up your summer. 1 pound boneless, skinless chicken breast
cup yellow onion, diced small
2 tablespoons vegetable oil
cup chicken stock
1 tablespoon curry powder
cup coconut milk
2 tablespoons brown sugar
2 tablespoons corn starch
cup water
Salt and pepper, to taste

1. Place oil on a skillet; sear chicken until golden brown then remove chicken
2. In the same skillet add onion and cook until translucent; add curry powder and sugar
3. Mix in chicken, chicken stock, milk; cook until chicken is tender
4. Mix in water and corn starch; add liquid mixture slowly to the chicken
5. Season with salt and pepper to taste
