Foodie Friday -- Classic Rock and Classic BBQ Recipes

Enjoy these tasty BBQ-style recipes, straight from SeaWorld's executive chef, Hector Colon.

Carolina pork marinade

1 cup fresh ground garlic
1 cup apple cider vinegar
2 tbsp salt
4 tbs Worcestershire sauce
1 tbsp liquids smoke
1 tsp black pepper
1 tbsp honey

Chef Colon recommends that you season the pork with salt, black pepper, garlic and oregano before marinating overnight. Then, as you're cooking the pork baste it at least five times.

Beef jerky

15 oz soy sauce
10 oz Worcestershire sauce
4 tbsp brown sugar
2 tbsp fresh garlic (ground)
2 tbsp onion powder
2 tbsp liquid smoke
2 cup water

To make jerky, Chef Colon likes to use brisket. Be sure to remove any fat then place the brisket in the freezer for at least two hours -- this makes it easier to slice into thin strips. Let them marinade for at least two hours, then place on a wire rack to dry overnight. Cook in the oven for two and two and a half hours at 170 degrees.
