Foodie Friday — Chicken Chili and Willie!

What’s better than a cup of Mom’s homemade chili? Full-of-flavor BBQ chicken chili, straight from SeaWorld’s Executive Chef, Hector Colon! Add a little zest to your typical BBQ eats by including this spicy and tangy dish.

2 chicken breasts, diced into small pieces
2 medium yellow onions, chopped
4 cloves of garlic, ground
1 medium green pepper, chopped
16 ounce can of diced tomatoes, drained
1-3 red chili pepper(s), chopped
4 ounces of BBQ sauce
12 ounces of beef stock
3 teaspoons of brown sugar
8 ounces of butter, melted
2 tablespoons of chili powder
1 tablespoon of cumin
3 tablespoons of cilantro, chopped
Salt and pepper, to taste
Oregano, to taste

1. Season diced chicken with salt, pepper and oregano.
2. In a frying pan, cook seasoned chicken until done.
3. Add cooked chicken and all ingredients to a slow-cooker and stir.
4. Let simmer (the longer, the tastier!).
5. Serve and enjoy.
