Foodie Friday -- Caribbean Pork Loin

It's the first week of November, and many people are starting to prepare for the cold winter months. Here in Orlando, it's always tropical at Discovery Cove! To showcase the exotic cuisine offered at the park's Laguna Grill, we're featuring their savory Caribbean Pork Loin this week. We invite you to relax in paradise this fall, looking out over white-sand beaches and our Dolphin Lagoon, while listening to steel drum tunes and enjoying each flavorful bite of this island-themed dish. If you can't visit Discovery Cove this season, not to worry. You can bring a slice of paradise into your very own kitchen with this simple and tasty recipe.

Ingredients:

4 lbs. pork loin

1 tsp. adobo

1 tsp. dry oregano

1 tsp.salt

1 tsp.garlic

1/2 tsp. black pepper

1 oz. onion mojo

Instructions:

Mix all seasonings together, and rub onto outside of loin. Cook for 30-45 minutes in a shallow pan at 350 degrees. Top with onion mojo, and serve over rice. If preferred, sliced pineapple can be used as a garnish, instead of onion mixture.
